This was a recipe I created for a dinner I made for my family at our condo in Canmore. My Aunt had just bought some Chinese spoons and requested I make a few amuse bouche for before dinner. This was everyones favourite and I have had requests for the recipe after posting pictures.
Seared and Crusted Ahi Tuna over
Micro Greens with a Wasabi Aioli Drizzle
Spice Rub
tsp Kosher Salt
tbsp Whole black peppercorns
tbsp Whole coriander
tbsp Whole cumin seeds
tbsp Sesame seeds
1/2 tsp Ground ginger
1/2 tsp cayenne pepper
- Grind black peppercorn, coriander, cumin, and sesame seeds with a mortar and pestle and mix with remaining spices (if you do not have a mortar and pestle, place spices in a coffee grinder, or in plastic wrap and crush with the bottom of a fry pan or pot)
Wasabi Aioli
tbsp wasabi paste (use more or less based on how spicy you like it)
1/2 cup mayo
3 Garlic cloves
tbsp fresh lemon juice
Pinch Ground ginger
Salt and pepper to taste
- Mix all ingredients in a food processor (if you do not have a food processor press or chop your garlic and mix all ingredients by hand) adjust flavour by adding wasabi, and adjust consistency with water (you do not want it too think, you should be able to drizzle it)
Spice rub
Ahi tuna steak (one inch think)
Canola oil
1 cup micro greens (anything you can find, any kind of sprouts, pea shoots, etc)
2 tbsp sesame oil
2 tbsp soy sauce
Wasabi aioli
Chinese spoons
- Completely cover the tuna steak in your spice rub, make sure to press the rub on
- Heat canola oil in pan on medium high heat, make sure your oil is very hot before placing tuna in pan
- Sear tuna in pan (depending on the thickness of the tuna it should take between 30 seconds to a minute and a half) the key is to only sear the tuna and leave it quite rare on the inside
- Toss micro greens in sesame oil and soy sauce and place a small amount of the mixture in bottom of spoons
- After tuna cools slice into thin strips and place onto of the micro green mixture
- Right before service drizzle desired amount of wasabi aioli over tuna and serve
